Fatayer are little pies popular in Palestine and throughout the Middle East. They can have a variety of fillings, from meat to cheese or spinach. Fatayer is a perfect appetizer or light snack.

Ingredients

Dough

1 tablespoon active dry yeast
1 1/2 cups warm water
3 cups all-purpose flour
1 tablespoon salt
1 tablespoon sugar
3/4 cup canola or olive oil

Filling

2 pounds (~0,9 kg) spinach
2 large onions
1/4 cup sumac
1/4 cup cumon
1 tablespoon salt
1/2 cup lemon juice
1/4 cup extra virgin olive oil

Instructions

1. Dough: Combine sugar, salt, flour, yeast, add the oil and mix it with the palm of your hands. Add the water and mix until it’s smooth and elastic. Place it in a large bowl, cover and let rest for 1-2 hours.
2. Filling: Wash the spinach and then squeeze it with your hands to squeeze out all excess water. Cut the onions into small pieces. Combine spinach with the filling ingredients and squeeze them again together.
3. Preeat the oven to 380 degrees.
4. Cut the dough into small pieces and roll into small circles as thin as possible.
5. Place 1 tablespoon filling in the middle of each circle, pinch together 3 edges of the circle over the center of thte filling to form a pyramid shape.
6. Place in a pan greesed with olive oil.
7. Bake until it’s getting bownish.
